Tres Leches Cake

Oh how we love this cake! It’s so moist and sweet and just so incredible. It is truly a treat when I make this and we enjoy every last drop of it.

Ingredients

  • Cake
  • 9 egg whites
  • 2 cups white sugar
  • 9 egg yolks
  • 1 tsp vanilla extract
  • 1/2 cup milk (I use whole)
  • 2 cups flour
  • 1 tbsp baking powder
  • Filling
  • 1 (12 oz) can evaporated milk
  • 1 (14 oz) can sweetened condensed milk
  • 2 cups heavy whipping cream
  • 1 tsp vanilla
  • Topping
  • 1 (8 oz ) cool whip

Preheat oven to 350 degrees. Grease a 9x13 pan and set aside.

In a medium bowl, beat egg whites until stiff. Set aside.

In a large bowl, beat sugar and egg yolks until light in color. Usually takes about 5 minutes.

Add vanilla and milk and mix to combine. Next, add in flour and finally the baking powder. Mix well to combine.

Fold egg whites into batter and then pour into prepared pan.

Bake for 35-45 minutes or until cake springs back when touched in center.

Allow to fully cool. At this point the cake may fall in the center.

Filling

Whisk together the evaporated milk, sweetened condensed milk and heavy whipping cream.

Once cake has cooled completely, using a fork, pierce the cake as much as possible. You want the filling to be able to really soak in. Slowly pour the filling over the cake. Once all soaked in, frost the cake with cool whip.

Best if allowed to sit for 4 hours or overnight before serving.
