Super Simple Taco Casserole

Dinner. The thing at the end of the day that most people don’t want to even think about until it’s time to make it. If this sounds like you then you need to try this recipe. It comes together super easy and quick and then while it’s cooking in the oven for 25 minutes, you can whip up a batch of my simple spanish rice and you will have a hot meal that your whole family will love. My 5 and 3 year olds can be super picky but they both just gobbled this up.

A delicious meal that comes together fast and the whole family will love


  • 1 lb ground beef
  • 1/4 yellow onion, finely chopped
  • 1 tsp garlic cloves, minced
  • 3/4 cup water
  • 1 packet taco seasoning or 2 tbsp of homemade seasoning
  • 1/2 cup taco sauce ( I used La Victoria Mild)
  • 1 (4 oz) can of green chiles, not drained
  • 1 (12 oz) box of corn tortilla taco shells, broken up
  • 3 cups shredded colby jack, mexican blend or cheddar cheese



Preheat oven to 375 degrees and spray a 9x13 baking pan with cooking spray. Set aside.


In a medium skillet, cook ground beef and onions until ground beef is browned. Add garlic cloves and cook another minute.


Add in water, taco seasoning, taco sauce and green chiles.


Cook on medium heat until almost all of the liquid is gone. About 10-15 minutes.


Take 1/2 of the broken taco shells and spread them on the bottom of the baking dish. Add 1/2 of the meat mixture on top and then 1 1/2 cups shredded cheese. Repeat with 1 more layer.


Bake in oven for 20-25 minutes or until cheese is bubbly.


Top with jalapenos, sliced black olives, sour cream or salsa.


Can also be made with corn tortilla chips in place of the taco shells.
