Fall is upon us and that means PUMPKIN! I will admit that I am a sucker for pretty much anything pumpkin. A fave around my house are soft pumpkin chocolate chip cookies. These things are thick and cake like but are just so delicious. A perfect addition to your pumpkin recipe collection.

Soft Pumpkin Chocolate Chip Cookies
A perfect addition to your pumpkin recipe collection
Ingredients
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup canola oil
- 1 tsp vanilla
- 1 large egg
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp milk
- 1 tsp baking soda
- 1 cup chocolate chips (I use milk chocolate but any chocolate works)
Instructions
Preheat oven to 375 degrees.
Lightly grease cookie sheet or line with parchment paper.
In a large bowl, combine pumpkin puree, sugar, oil, vanilla and egg. Mix well.
In a separate bowl, combine flour, baking powder, salt and cinnamon.
In another bowl, add baking soda to milk and allow to dissolve.
Add the dry mixture and the milk mixture to the pumpkin puree mixture. Mix well.
Add the chocolate chips and stir to combine.
Drop large spoonfuls of dough on prepared cookie sheet. Bake for 10-12 minutes.
Allow cookies to rest on cookie sheet for 1 minute before removing to cooling rack.
