Snickerdoodles
A simple recipe for a classic soft cookie
Ingredients
- 1 cup unsalted butter, softened
- 2 cups white sugar, divided
- 2 large eggs
- 2 tsp cinnamon
- 2 1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
Instructions
Preheat oven to 350 degrees.
In a large bowl, beat butter and 1 1/2 cups sugar until it turns a pale yellow color.
Mix in eggs, one at a time, until well combined.
In a separate bowl, sift together the flour, baking powder and salt.
Slowly add the flour mixture to the butter mixture until it's all combined.
In a separate small bowl, mix together the remaining 1/2 cup of sugar and cinnamon.
Shape the dough into round balls (I usually make them a little less then 2 inches). Roll the balls in the cinnamon sugar and place on an ungreased cookie sheet.
Bake for 9-10 minutes or until bottoms begin to brown.
