Shrimp Tacos

Shrimp? Tacos? You simply can’t go wrong with this easy and delicious meal. Add in a corn tortilla quesadilla as your starting point and you are in for one tasty dinner.

Ingredients

  • 1 lb medium peeled & deveined shrimp (tails off)
  • 3 cups shredded cabbage
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 lime, zested & juiced
  • 1/4 tsp paprika
  • 1/4 tsp chili powder
  • Salt
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • Optional toppings: avocado, grape tomatoes, salsa

Instructions

In a medium bowl, combine shrimp, olive oil, garlic, lime zest, paprika, chili powder and a shake of salt. Cover and allow to marinate in refrigerator for at least 15 minutes.

In a separate bowl, combine shredded cabbage, 1 tbsp of lime juice and a shake of salt. Mix well to combine.

When you are ready to cook the shrimp, heat a medium skillet over medium high heat. Cook shrimp until done, about 10 minutes. Remove from heat.

In a small skillet, heat to medium and spray with cooking spray. Place 1 corn tortilla in the pan and then top with some shredded cheese. Place another corn tortilla over the cheese and spray the top with cooking spray. After about a minute or so, flip to sear the other side. All you are doing is allowing the cheese to melt. Once done remove from heat and assemble taco.

To assemble, take your heated and cheesy corn tortilla and add some cabbage and shrimp. Add avocado, more cheese, grape tomatoes or any other toppings you desire. Enjoy!
