Roasted Sweet Potato Bites

Sweet potatoes are such a delicious side dish or even a main course. You can really do a lot with them. Since Thanksgiving is next week, I thought I would share a yummy alternative to the popular casserole.

Ingredients

  • 2 lbs sweet potatoes, peeled and cubed into bite sized pieces
  • salt & pepper
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 lemon (zest & juice)
  • 1/4 cup honey
  • Optional: Small marshmallows

Instructions

Preheat oven to 425 degrees. Line a baking sheet with aluminum foil and set aside.

Put the peeled and cut sweet potatoes into a large bowl and season with a little salt and pepper. Not a lot, just a little sprinkle of both.

In a small saucepan, melt the butter on low heat and then add the olive oil. Stir. Add in the lemon juice, lemon zest and honey. Stir. Allow to come to a simmer and cook for 1 minute.

Pour the warm sauce over the sweet potatoes and stir well to coat. Pour coated sweet potatoes on the foil lined baking sheet.

Place in oven and cook for 25-30 minutes or until they are soft. If desired, remove from oven and sprinkle with some small marshmallows. Put back in oven and cook another 3-5 minutes or until the marshmallows have melted.
