Side dishes are sometimes the hardest thing to figure out. Do you go with your usual or try something new? These roasted garlic parmesan red potatoes have the perfect amount of seasoning and crispy outside. I made them alongside a nice NY strip steak and my honey roasted carrots.
Roasted Garlic Parmesan Red Potatoes
Ingredients
- 1 1/2 lbs red potatoes, washed and quartered
- 1/4 cup olive oil
- 1/2 cup grated parmesan cheese
- 6 cloves garlic, minced
- 1 tbsp italian seasoning
- Salt & Pepper
Instructions
Start by parboiling your potatoes. To do this, boil a large pot of water and add potatoes. Boil for 8 minutes. This just helps the potatoes to be softer on the inside.
Preheat oven to 400 degrees and spray a baking pan with non stick cooking spray. Set aside.
In a large bowl, mix olive oil, parmesan cheese, minced garlic, italian seasoning and salt & pepper.
When potatoes are finished boiling, drain well and toss in parmesan mixture. Spread evenly on baking sheet with cut sides down.
Bake for 25 minutes total. After 15 minutes, turn the potatoes over and cook the additional 10 minutes.
