As I have stated in other recipes, I love pretty much anything with pumpkin. But my all time favorite pumpkin dessert is a simple pumpkin pie with whipped cream. It’s like coffee for me, just gives me happy feelings. Actually, now that I said that, I think I’m going to go grab a slice to enjoy with my coffee while I type out this recipe for you all. Enjoy!
If you need a good crust recipe, here is the one I use. Been in my family for years. https://heartandsoulcooking.com/?p=157
A simple and delicious recipe
- 1 3/4 cups canned pumpkin puree
- 1 3/4 cups sweetened condensed milk
- 2 large eggs, beaten
- 2/3 cup brown sugar, packed
- 2 tbsp white sugar
- 1 1/4 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 2 unbaked pie shells (Make sure to fork the bottom of the crusts)
Preheat oven to 425 degrees.
Combine all ingredients (except pie shells) in a large bowl and beat with an electric mixer for 3 minutes.
Split batter and pour equally into the 2 unbaked and prepared pie shells.
Bake for 15 minutes at 425 and then reduce heat to 350 degrees and cook an additional 40-60 minutes or until inserted knife comes out clean.
Cool on wire rack.
