Pumpkin Cake Bars with Cream Cheese Frosting

I really love pumpkin. I mean, I would be completely happy if I got to eat or drink something with pumpkin every single day. These pumpkin cake bars are just the ticket to satisfy any pumpkin craving and the cream cheese frosting just makes these ten times better then you could even imagine. Perfect for fall!

*I literally just whipped up a batch of these cause we ran out of pumpkin chocolate chip cookies and I was in the mood for pumpkin. So delicious!

Pumpkin Cake Bars with Cream Cheese Frosting

A perfect pumpkin bar with cream cheese frosting

Ingredients

  • 2 cups flour
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 4 large eggs, slightly beaten
  • 2 cups white sugar
  • 1 cup canola oil
  • 15 oz pumpkin
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tbsp milk
  • 1 tsp vanilla extract

Instructions

Preheat oven to 350 degrees.

Spray a 9x13 baking dish with cooking spray. Set aside.

In a medium bowl, combine flour, salt, cinnamon, baking powder and baking soda.

In a large bowl, mix together eggs, white sugar, oil and pumpkin. Slowly add the dry ingredients. Mix until well combined.

Pour into prepared pan and bake for 30-35 minutes or until inserted toothpick comes out clean.

Allow cake to cool completely before frosting.

To make frosting: beat the cream cheese until smooth. Add in powdered sugar and milk and mix until well combined. Add vanilla and mix until well combined.

Spread frosting over cooled cake and cut into bars.

For a polished look, lightly dust cake with cinnamon.
