You can easily make these chimis in an air fryer but honestly, I tried it and they just didn’t taste the same. Healthier, yes, but that “fried in oil” taste is just so good.
Mini Shredded Beef Chimichangas
Ingredients
- 3 cups shredded green chile meat
- 1 package egg roll wrappers
- 2 cups shredded cheddar cheese
- 1 can refried beans
- Oil for frying
Instructions
Fill a medium frying pan about halfway with oil. I like to use canola oil. Turn heat to medium high.
On a clean and dry cutting board, lay out one egg roll wrapper. Beginning at one of the points, place about a tablespoon of refried beans horizontally, leaving about an inch on both sides (so you can roll it without stuff coming out). Add about a tablespoon of shredded cheese on top of the beans and then put about 1/4 cup of shredded meat on top of the cheese.
Begin rolling by taking the 2 side points and meeting them at the middle over your filling. Take the point that is closest to your filling and pull it over the 2 sides you just connected. Roll until it gets to the end. Wet your fingers and add a little bit of moisture to the remaining point (this will allow it to stick together). Roll the rest of the way and you should have a mini chimi.
Place the chimi in the oil and fry both sides about 3-4 minutes each. Remove and place on paper towel lined plate to drain.
