Loaded Potato Soup
Loaded with tons of flavor and comes together in about 30 minutes
Ingredients
- 5 medium sized potatoes, scrubbed
- 6 tbsp unsalted butter
- 3 garlic cloves, minced
- 1/4 cup yellow onion, chopped
- 1/3 cup flour
- 2 cups milk (I used whole milk)
- 1 cup half & half
- 2 (14.5 oz) cans of chicken broth
- 1 tsp salt
- 1/2 tsp garlic salt
- 1/2 tsp black pepper
- 2 1/2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 (3 oz) bag of real bacon bits
Instructions
Take your potatoes and poke a few holes in each one. Place in the microwave and cook for 12-15 minutes or until they are fork tender.
While your potatoes are cooking, melt butter in a large pot on medium heat.
Add onion and minced garlic and cook until onion is tender. About 5-7 minutes.
Slowly whisk in flour and cook for another minute.
Slowly whisk in milk and half & half. Then slowly add in chicken broth, salt, garlic salt and pepper.
Allow to cook until it comes to a simmer, stirring frequently.
Once potatoes are done, remove from microwave and cut in half. Allow to cool enough to handle and then chop to your preferred size (we like ours very small). Set aside.
Once the soup has come to a simmer, add the shredded cheese, sour cream and bacon bits. Stir until all the cheese has melted.
Remove from heat and add in potatoes. Serve while hot.
