Comfort food comes in many shapes and flavors, but for me it usually has potatoes and some form of meat and cheese. This dish has all the elements to make a hearty and filling meal with just the right amount of flavor. My entire family loves this which is always a plus.

Kielbasa Potato Bake
A hearty comfort food
Ingredients
- 3 cups potatoes, peeled, cubed and boiled until fork tender (Do not over boil)
- 1 lb kielbasa sausage, cut into half moon pieces (I like to slice them fairly thin)
- 4 tbsp unsalted butter
- 4 tbsp flour
- 2 cups half & half, heavy whipping cream or milk
- 8 oz Velveeta cheese, cubed
- 1 tsp onion powder
- 1 tsp yellow mustard
- 1 cup shredded cheddar cheese
- 1/4 tsp ground pepper
Instructions
Boil potatoes until fork tender. Do not over boil as this will cause the dish to be mushy. Drain and set aside.
In a medium skillet over medium/high heat, brown the kielbasa. Set aside.
In a medium saucepan, melt butter. Add flour, half & half, Velveeta cheese, onion powder, yellow mustard and pepper. Whisk until completely smooth.
In a round casserole dish, mix potatoes and kielbasa. Pour sauce over top and then top with shredded cheese.
Bake at 350 degrees for 45 minutes.
Remove from oven and let sit for at least 15 minutes before serving.
