When trying to eat lower carb, it can get pretty boring. The original recipe for these called for ground beef which I’m sure tastes good as well. I had made a chuck roast in the crock pot the day before and used that meat for these and it was amazing! Very filling too. Give them a try.
Keto Shredded Beef Taquitos
Shredded chuck roast in a cheese shell
Ingredients
- 1/4 lb cooked and shredded chuck roast
- 1 cup shredded colby jack cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- Optional: sour cream, lime, salsa, avocado
Instructions
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper, set aside.
In a bowl, mix together all 3 cheeses.
Separate the cheese into 6 piles and place 3 of the piles on a baking sheet.
Bake for 6-8 minutes or until melted and edges are brown. Remove from oven and place some meat on edge of cheese shell and roll. Repeat with rest of cheese shells.
Notes
I enjoyed these with just a little drizzle of fresh lime and some sour cream.
