If there is one drink besides coffee that I just love, it’s horchata. I never realized how easy this fabulous drink was to make but now that I do, this will be a staple item next to my cold brew coffee in my fridge.
Horchata
Ingredients
- 1 1/3 cups uncooked long grain white rice
- 2 whole cinnamon sticks
- 4 cups water, divided
- 1 cup milk (I used whole)
- 2 tsp vanilla extract
- 1/2 cup white sugar
Instructions
In a blender, add rice, cinnamon sticks and 2 cups of water. Blend for about a minute or until the rice and cinnamon sticks are roughly ground up. Add the remaining 2 cups of water and blend again for another minute.
Allow the rice mixture to sit at room temperature for a minimum of 8 hours or overnight.
Once the time is up, strain the rice mixture in a fine wire strainer. Throw away the remaining pieces left on the strainer and rinse the strainer well. Strain the mixture 1 to 2 more times. You don't want your horchata to be gritty.
Pour well strained mixture into a large pitcher or container and add the remaining ingredients. Chill until ready to drink.
Serve over plenty of ice with a sprinkle of cinnamon on top if desired.
Notes
You'll need to stir the horchata before you pour into a glass.
