I always forget how much I love egg salad until Easter rolls around and I am left with a couple dozen hard boiled eggs. This recipe can be adapted to your specific taste and is delicious as is or with different things mixed in. Celery, pickles, black olives and avocado are all really good added to this.
- 6 hard boiled eggs, peeled and chopped
- 1/4 cup mayo
- 1/2 tsp sugar (optional)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt & pepper to taste
- 1 tbsp yellow mustard (optional)
Mix all ingredients together. Enjoy!
If you like a crunch, try adding some chopped celery or pickles.
