Easy Southern Peach Cobbler

Warm peach cobbler with a side of vanilla ice cream has got to be one of those desserts that just takes you back to your childhood. This recipe isn’t the typical bread like cobbler but rather has a crispy topping that just melts in your mouth. Canned peaches make this dessert so easy to make and it is really a foolproof dish that is so delicious it will seem like it took you all day to make.

Ingredients

  • Cobbler Filling
  • 2 (29 oz) cans of sliced peaches in heavy syrup
  • 1/2 cup white sugar
  • 1/8 tsp salt
  • 1/8 tsp cinnamon
  • 5 tbsp melted butter
  • 2 1/2 tsp lemon juice
  • 2 tsp vanilla extract
  • Crispy Topping
  • 2 cups flour
  • 2 tsp baking powder
  • 1 1/2 cups white sugar
  • 1/8 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup melted butter

Preheat oven to 375 degrees.

Pour 1 can drained peaches in the bottom of a 9x13 casserole dish. Next, take the second can of peaches and pour the entire thing (juice and all) into the bottom of the dish.

Add 1/2 cup white sugar, 1/8 tsp salt, 1/8 tsp cinnamon, 5 tbsp melted butter, lemon juice and vanilla extract to the peaches. Mix well to combine.

In a separate bowl, mix together the flour, baking powder, 1 1/2 cups white sugar, nutmeg, 1 tsp cinnamon and a 1/2 tsp salt.

Pour the flour mixture over all of the peaches and using your hand, gently spread the flour mixture over the peaches until smooth.

Once the flour mixture is smooth, take the melted butter and drizzle over the entire top.

Put in oven and bake for 15 minutes.

Once 15 minutes is up, lower the temperature to 350 degrees and cook for another 60 minutes.

Serve warm with vanilla ice cream.
