In need of an easy side dish that your family will love? Try making these easy cheesy potatoes. You boil the potatoes first which cuts down on the cooking time. My kids loved them and even asked for seconds.

Ingredients

  • 2 lbs potatoes, washed and sliced
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 4 cups shredded cheese (I used cheddar jack cheese)

Instructions

1

In a large pot, boil water. Add sliced potatoes and boil for 7 minutes. Drain.

2

Preheat oven to 375 degrees.

3

While potatoes are boiling, mix together the soup, milk, garlic salt and black pepper. Heat in microwave until hot.

4

Spray a 9x13 glass dish with cooking spray. Spread a little bit of the soup mixture on the bottom. Add about a half cup of cheese on top. Put the boiled potatoes on top of the cheese and add the rest of the soup mixture, coating all the potatoes. Sprinkle with the rest of the cheese.

5

Bake for 25-35 minutes or until cheese is bubbly.
