Easiest Ever Beef Enchiladas

Finding an easier way to make my favorite foods has been my lifelong mission. This recipe uses tortilla chips instead of corn tortillas to make this dish even easier to make. And the best part is my hubby agrees that these enchiladas are actually better than the traditional ones. Score!

Easiest Ever Beef Enchiladas

Ingredients

  • 1 lb ground beef
  • 1/2 tbsp onion powder
  • 1/4 tsp ground black pepper
  • 1 (10-12 oz) bag of tortilla chips
  • 1 (28 oz) can red enchilada sauce
  • 1 cup salsa
  • 1 can black beans, rinsed and drained
  • 1 (32 oz) bag shredded cheddar cheese, divided

Instructions

Preheat oven to 350 degrees. Coat a 9x13 casserole dish with cooking spray and set aside.

In a medium skillet on medium high heat, add ground beef, onion powder and ground black pepper. Cook until browned.

In a large bowl, add cooked ground beef, tortilla chips, red enchilada sauce, salsa, black beans and all of the cheese except 2 cups. Mix well, crushing the chips a little.

Transfer mixture to casserole dish and add the remaining 2 cups of cheese on top.

Place in the oven and cook for 35-40 minutes or until cheese has begun to brown.

Notes

Toppings that go great on this are: sliced avocados, black olives, sour cream, lettuce, tomatoes, fried eggs. We especially love a fried egg and sour cream on our enchiladas.
