Creamy Meatball Ravioli Soup

Out of the 7 girls that my Mom has, I am really the only one that enjoys cooking and baking. All of my sisters have their own talents but cooking and baking, yeah not so much. So when my older sister showed up to our Mom’s house the other day with ingredients for a soup she was going to make, I was intrigued. It smelled incredible while cooking and tasted even better.

A hearty soup to warm you up

Ingredients

  • 3 tbsp unsalted butter
  • 1/4 onion, diced small
  • 2-3 carrots, thinly sliced
  • 3 garlic cloves, minced
  • 1/4 cup flour
  • 6 cups chicken or vegetable broth
  • 1 (24 oz) package mini cheese ravioli
  • 1/2 bag of frozen meatballs
  • 1 cup milk
  • 2 potatoes, diced
  • Salt & pepper to taste

Instructions

In a large pot on medium high heat, melt butter and add onion and carrots. Saute for 5 minutes.

Add minced garlic and cook for 1 minute.

Add flour and mix well to combine.

Slowly add the broth and whisk to ensure it doesn't clump.

Bring to a boil.

Once it comes to a boil, add frozen meatballs and potatoes. Lower heat and simmer for 10 minutes.

After the 10 minutes, add frozen ravioli and cook an additional 8-10 minutes.

Add milk and cook an extra 5 minutes.

Add salt and pepper to taste.
