Copycat El Pollo Loco Chicken

Nothing is better then your favorite meal from your favorite restaurant, except being able to make that meal at home for much less then you would spend eating out. This copycat of El Pollo Loco’s chicken is amazing! Lots of flavor and the chicken is spot on.

The PERFECT copycat of the famous El Pollo Loco Chicken

Ingredients

  • 6 chicken thighs, bone in, skin on
  • 1 tbsp white vinegar
  • 2 cloves garlic, minced
  • 1 tsp garlic salt
  • 1/2 tsp dried oregano
  • 1/4 tsp ground pepper
  • 1/2 jalapeno, seeded and finely minced
  • 1 cup pineapple juice
  • 2 tbsp lime juice
  • 1 tbsp canola oil

Instructions

Mix all ingredients except chicken and place in a large plastic baggie, reserving about 1/4 cup for basting. Add chicken and marinate at least overnight but for better flavor 1-2 days.

When ready to cook, heat oven to 425 degrees.

Place chicken on a foil lined cookie sheet and bake for 35 minutes or until juices run clear.

Remove chicken from oven and place on a grill, either outdoor or indoor will work fine. Grill until skin is to your liking. About 5 minutes per side.

Notes

El Pollo Loco uses yellow food coloring in their marinade but this doesn't add any flavor to your dish. But if you would like it to look more authentic then add about 6 drops of yellow to the marinade.
