Rice is one of those foods that is so versatile and easy to make that it’s no wonder it’s such a popular side dish. I love rice, and realistically, I can eat a whole bowl of just plain rice and be super happy but I came across this recipe a while ago and just instantly fell in love. I normally am not a fan of cilantro but it works so perfectly with the lime that you just can’t help but love it. Give it a try and let me know what you think.
Cilantro Lime Rice
Ingredients
- 1 cup already made white rice
- 1 tbsp canola oil
- 1 tsp salt
- 1 tbsp fresh cilantro-chopped
- Juice from 1-2 fresh limes
Instructions
In a large skillet on medium high heat, combine all ingredients and cook for a few minutes, stirring frequently until the rice is warmed up. If using fresh cooked rice, just cook for a few minutes to allow the ingredients to blend together.
Notes
This rice is incredible if used with my Crock Pot Shredded Ranch Chicken recipe. I like to add some of this rice, black beans, the chicken, cheese and sour cream in a flour tortilla. It is a mighty close copycat of a Chipotle burrito.
