Chocolate Fudge Mummy Cupcakes

Halloween is such a fun time where the weather begins to change and kiddos are excited about being their favorite character for a day. These adorable Mummy cupcakes fit right in and are really easy to make.

A fun and delicious treat to add to your Halloween activities

Ingredients

  • Cupcakes
  • 1 box chocolate fudge cake mix ( I like Betty Crocker)
  • 4 large eggs
  • 1/2 cup melted butter
  • 1 1/4 cup milk
  • Vanilla Buttercream Frosting
  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable shortening
  • 1 lb powdered sugar
  • 1 tbsp hot water
  • 1 tsp vanilla extract
  • Extra Items Needed
  • Edible eyes
  • Wilton basket weave tip number 47 or 48
  • Piping bag
  • Cupcake liners

Instructions

Preheat oven to 350 degrees. Line 2 cupcake pans with 24 liners.

Mix together the 4 ingredients for the cupcakes and beat with an electric mixer on medium speed for 2 minutes.

Fill each cupcake liner with about 1/4 cup of batter and bake for 14-16 minutes or until inserted toothpick comes out clean. Allow to cool.

While the cupcakes are cooling, make the frosting.

I love my Kitchenaid mixer for this but a normal handheld electric mixer works just as good.

Mix together the softened butter and vegetable shortening until smooth. Slowly add the powdered sugar. Once all the powdered sugar is incorporated, add the hot water and the vanilla extract. Beat on medium speed for 10 minutes. You need to do this for 10 minutes otherwise your frosting will be too thick and it won't pipe nicely.

Fill a piping bag fitted with a basket weave tip (Wilton 47 or 48) with frosting and pipe some bandages on the cooled cupcakes. Add 2 edible eyes. And there you go!
