Here is AZ, we use a lot of corn tortillas in our every day lives. So it’s fitting to add them to breakfast. I’m not sure how this recipe came about but my Mom made it for me once and since then I make it for my family quite often. It’s fast and easy and something different then your standard eggs and toast.
Chips & Eggs
Scrambled eggs and fried corn tortillas make the perfect breakfast
Ingredients
- 4 corn tortillas, cut into triangles (Cut like you would a pizza)
- 2 large eggs, slightly beaten with a dash of milk
- 1 tbsp oil
- Butter
- Salt & pepper
Instructions
In a medium skillet, add oil and corn tortillas. Cook over medium/high heat until corn tortillas are slightly crispy. Remove from heat and set aside.
In a small skillet over medium heat, melt butter. Pour beaten eggs in and season with salt and pepper. Scramble eggs to your liking and then pour cooked eggs in medium skillet with cooked corn tortillas. Stir to mix.
Notes
Optional Toppings: shredded cheese, salsa, sliced avocado, ketchup. You can easily make this recipe for a larger crowd. I've done as many as a dozen eggs and 2 dozen corn tortillas and it comes out perfect!
