We can all agree that this soup is not in any way healthy but oh man it’s so delicious and you gotta have tasty stuff in your life at least a little. It’s creamy and cheesy and warms your whole body up.
Chicken Enchilada Soup
Ingredients
- 1 tbsp unsalted butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup masa harina
- 2 cups water
- 1 cup enchilada sauce (I use mild)
- 16 oz Velveeta cheese, cut into small cubes
- 4 oz cream cheese, cut into small cubes
- 2 cups cooked and shredded chicken
- Salt & pepper to taste
Instructions
In a large soup pot, melt butter and add chopped onion. Saute for about 5 minutes on medium heat or until onions are soft. Add minced garlic and cook until fragrant, about 1-2 minutes.
Add chicken broth to pot and bring to a boil.
While you are waiting for the broth to boil, whisk together the 2 cups of water and 1 cup of masa harina until smooth.
When the broth comes to a boil, whisk in the masa harina mixture until smooth.
Add enchilada sauce, velveeta cheese and cream cheese. Cook until cheeses are melted, whisking frequently.
Stir in shredded chicken and salt and pepper to taste.

Optional toppings: sour cream, tortilla strips, avocado, pico de gallo, shredded cheese
