After anything pumpkin, my all time favorite fall food is sweet potatoes. I love any type of sweet potato but this candied version is at the top of my list. My Grandma made these every Thanksgiving while I was growing up and 9 years ago she passed the recipe onto me. I love a good sweet potato casserole with marshmallows or almonds on top but for some reason these are just so much better to me. They are time consuming but oh so worth it.
Candied Sweet Potatoes
A sweet alternative to the classic sweet potato casserole
Ingredients
- 6 medium sweet potatoes
- 1/4 cup butter
- 1/2 cup dark corn syrup
- 2 tbsp water
- 1/4 cup packed brown sugar
Instructions
In a large pot, bring water to a boil. Add sweet potatoes and boil for 15 minutes.
Remove from water and allow to cool. Once cooled, peel the sweet potatoes.
Cut the sweet potatoes in half, lengthwise.
In a large skillet, mix butter, corn syrup, water and brown sugar.
Arrange the sweet potatoes with cut side down over the mixture in skillet.
Cook on very low heat, uncovered, basting occasionally for 1 hour or until potatoes are tender and well glazed.
Remove from skillet and cut into pieces of your liking. Serve warm.
