Cajun Chicken Pasta

This recipe is super easy and the whole family will love it. Heats up well the next day to eat as leftovers.

Ingredients

  • 8 chicken tenderloins or 2 boneless skinless chicken breasts
  • 4 tbsp olive oil, divided
  • 2 tbsp cajun seasoning
  • 16 oz penne pasta
  • 1/2 cup unsalted butter
  • 1 (8 oz) package cream cheese
  • 2 tsp garlic salt
  • 2 cups heavy whipping cream or half and half
  • 6 oz grated parmesan cheese
  • 1/4 tsp black pepper
  • 2 roma tomatoes, diced
  • Optional: Shredded parmesan cheese

Instructions

In a large ziploc baggie, add 2 tbsp olive oil and 2 tbsp cajun seasoning to the chicken tenderloins or breasts. Shake well.

Heat remaining 2 tbsp olive oil over medium high heat and add seasoned chicken. Cook until there is no longer a pink center.

In a large pot, boil water and then add pasta. Cook according to directions.

In a medium saucepan over medium heat, melt 1/2 cup of butter. Add cream cheese and garlic salt and whisk to melt the cream cheese. Once melted and smooth, slowly add heavy whipping cream and continue to whisk. Once smooth, add grated parmesan cheese and black pepper.

Once the chicken, pasta and sauce are all done, you can either mix them all together in the large pot or we like to just put the desired amount of sauce on our pasta. Top with diced roma tomatoes and some shredded parmesan cheese.
