Buffalo Chicken Meatballs

Football season is well upon us which means so is party season. What better food to bring to a football party then meatballs. Add in buffalo sauce and a good ranch and oh man you are in for some good eating! I have made this for a few gatherings and I always get asked for the recipe. Try it out and let me know what you think.

Buffalo Chicken Meatballs

A perfect party food

Ingredients

  • 1 lb ground chicken
  • 1 tbsp buffalo wing sauce (I used Franks RedHot Buffalo Sauce)
  • 1 clove garlic, minced
  • 5 green onions finely chopped
  • 1 large egg
  • 1 cup panko crumbs
  • ½ tsp onion flakes
  • 1 tsp celery salt
  • 1 package dry ranch dressing mix
  • Salt & pepper to taste
  • 1/2 cup buffalo wing sauce

Instructions

Preheat oven to 400 degrees.

Line a baking pan with parchment paper and put a metal cookie cooling rack on top (Can be baked directly on parchment paper if you don't have a cooling rack)

Mix all the above ingredients (except 1/2 cup buffalo sauce) together. Spoon desired amount for meatball and roll into a ball. Place on rack and bake for 10 minutes or until slightly browned.

Transfer meatballs to crock pot and pour ½ cup of buffalo sauce over top. Gently stir to cover all meatballs. Add more sauce if desired. Cook on low for 2 hours.

Serve with ranch or blue cheese dressing.

Notes

I usually top with a little more sauce right before I leave for the party just to give them a little more kick. If placing on a platter, use thin slices of celery as "toothpicks" in the meatballs.
