Beef & Veggie Kebabs

Beef and veggies marinated and grilled to perfection. You simply can’t go wrong. This recipe has been something my family has been making for as long as I can remember. Best part about this is if you prep it beforehand, then just pop these on the grill and make a side of rice and you have a delicious and healthy dinner.

Ingredients

  • 1 bottle italian dressing (any brand)
  • 1 bottle A-1 sauce
  • 2 lbs beef stew meat
  • 1 red onion, cut in squares
  • 1 yellow bell pepper, cut in squares
  • 1 orange bell pepper, cut in squares
  • 2 packages of whole mushrooms, stems removed
  • 1 yellow squash, cut in half moons
  • 1 zucchini squash, cut in half moons
  • 1 package grape tomatoes
  • 1 package bamboo skewers

Instructions

Mix italian dressing and A-1 sauce in a large bowl.

Put stew meat in a plastic baggie and pour just enough of the italian dressing mixture to coat the meat. Put in fridge.

Put all the cut up veggies in a large plastic baggie and pour the rest of the italian dressing mixture in there. Put in fridge.

Allow both meat and veggies to marinate overnight or for at least 8 hours.

About an hour before you begin assembling the kebabs, place the bamboo skewers in a large tub of water. This will help the skewers to not burn while they are on the grill.

When you are ready to assemble, take a piece of meat and put it on the skewer, then 3-4 veggies, another piece of meat and so on. Continue until you have used up all the meat and veggies.

Place on grill and cook until your desired meat temperature. Personally, I like the beef a little more done so it takes about 25-30 minutes.

Enjoy over a bed of rice or just by themselves.
