I am always on the hunt for good staple recipes and the first time I made this, I knew it was going on my list. It is so easy and you can adapt it for one person up to however many you need. The chicken stays juicy and the topping gives it so much flavor.
Pair it with these green beans with caramel onions https://heartandsoulcooking.com/?p=211 or garlic butter steamed broccoli https://heartandsoulcooking.com/?p=164 for an easy and delicious meal.
Baked Parmesan Chicken
An easy to make recipe
Ingredients
- 2 chicken breasts (I always cut them in half to thin them out)
- 1/4 cup grated parmesan cheese
- 1/4 cup mayo
- 1/4 tsp garlic powder
- Salt
- Lemon pepper
- Almond flour or bread crumbs
Instructions
Preheat oven to 400 degrees.
Spray a cooking sheet with cooking spray. Set aside.
In a small bowl, mix together the parmesan cheese, mayo and garlic powder.
Take the chicken breasts and season to your liking with salt and lemon pepper. Spread the parmesan mixture evenly over top of the two chicken breasts.
Set chicken on cooking sheet and bake for 15-20 minutes.
Remove from oven and generously sprinkle the top of the chicken with almond flour or bread crumbs. Put back in oven.
Bake an additional 20 minutes or until juices run clear.
