I was aimlessly searching my kitchen a few nights ago looking for something different to make. I hadn’t gone grocery shopping for a week and my go to side dishes had dwindled. I had this bag of wild rice in my fridge and I remembered seeing a recipe once for wild rice with apples and pecans in it. So with that in mind, I gave this a try. Turned out really good although my hubs said it was a little too sweet for his liking.
Apple Pecan Cranberry Wild Rice
A sweet and savory side
Ingredients
- 1 cup wild rice
- 1 3/4 cups chicken broth
- 4 tbsp unsalted butter, divided
- 1/4 tsp black pepper
- 1/4 tsp dried oregano
- 1/4 tsp thyme
- 1 apple, chopped into small pieces
- 1 cup chopped pecans
- 1 cup dried cranberries
Instructions
In a medium saucepan, add wild rice, chicken broth, 2 tbsp butter, black pepper, oregano and thyme. Bring to a boil and cover. Reduce heat and simmer for about 45 minutes or until liquid is gone.
When rice is done, remove from pan and put in bowl. Set aside. Melt the other 2 tbsp of butter in the pan. Add apples and cook until soft. About 3-5 minutes. Add pecans, cranberries and rice to the apples and mix well.
